New Orleans Children taste King Cake for the First Time-
Thanks to a Local Mother Who Finds Her Niches as a Gluten-Free Baker:
NEW ORLEANS (February 5, 2010)- The brainchild of a working mom, the CUPCAKE KING CAKE was created to provide those who live with food allergies, diabetes, celiac disease, autism or special diets with delicious desserts rather than ones that taste like cardboard.
Chase Nugent is a veteran of the television and digital broadcast industry, and self described New Orleanian. In 2008, Chase’s son, John-John was diagnosed as having a gluten and casein allergy. So a nationwide search began to find John delicious gluten free/ casein free cupcakes. Her search turned up many recopies yet they were more like dry, tasteless softballs.
Unsuccessful in her pursuit of gluten-free/ casein-free cupcake perfection, Chase stopped the chase. Returned to the kitchen, and focused on creating a gluten-free/casein-free/ dairy free/ egg free/dye free/ vegan masterpiece.
The result, the CUPCAKE KING CAKE, created so that everyone can participate in the tastiness that is the king cake.

WOW , FINALLY A GOOD CUPCAKE, MY GRANDSON BRANDON IS 8 YEARS OLD. HE HAS AUTISM, HIS FIRST WORD WAS CUPCAKE. HE SAYS HAPPY BIRTHDAY, CUPCAKES, CUPCAKES, CUPCAKES.HAPPY BIRTHDAY PARTY, HE LOVES THEM. BUT NAVER CAN GIVE THEM TO HIM BECAUSE OF THE INGERENTS. IM SO GLAD THERE IS A GFCF NOW , WOULD LOVE TO HAVE SOME, IT WOULD BE LIKE A BIRTHDAY PARTY TO BRANDON. GRANDMA BARBARA

I would love to win these. Both my grandson and I have to eat Gluten
Free. I have food allergies and he has Autism and is also allergic to Chocolate. SInce I have gone Wheat Free and then Gluten Free I feel so much better. But I have given up on tasty treats. He loves cupcakes. He is only 4 years old. Would love to try these.

Chase- I join you in the quest for a decent cupcake! It was my son's birthday today, so I whipped up a batch of SCD legal strawberry-lemon wonders I made from coconut flour. For frosting: tutti-fruity! It was smooth and fluffy , starch and sugar free (not quite "SCD legal" for strict SCD-ers) Out of 10 kids present, only 1 thought they were different- and these are kids who have never been on special diets (except mine). I salute you fellow baker- and would love to try one of your groovy cupcake flavors. I might even send you some of mine back to try on for size!! (besides, I have found creative ways to re-use and recycle those styrofoam boxes our kids MB-12 shots come in every month- mail food!)

At Christmas we went to a relatives in Ohio (we were visiting from CA). Every kind of cookie on earth. He said "are there any cookies here for me" and even though I'd asked my amazing cook relatives to try to make something GFCF, they were harried with their own lives and no one had made him anything but thinking they would have I had nothing to give him. And he hid the cookies under a coffee table that he couldn't have (still artfully arranged on the cookie plate) and got in big trouble with the relatives and grandma who never have understood autism really or why he's on this diet that might be theoretical. . I finally got him to put the cookies back and admit he, not the GFCF fairy, had hidden them to keep everyone safe from GFCF cuz if its bad for him isn't it bad for them? and . . .darn his birthday is coming up and boy those cupcakes sound good!

Oh My! Cupcakes I wouldn't have to make or "invest" in - just enjoy?! My DD birthday party was yesterday- butterfly cookies: 2 different scratch batches of GFCF dough, "free-icing", time locating Swallowtail/Blue Morpho cookie cutter and pricy natural colors= priceless smiles of DD and awe of other NT Moms just takes more effort.

Watched the first Harry Potter movie last night. They had huge banquets, and around Halloween they had piles of cakes with all kinds of icing and sprinkles along with all kinds of fancy candy on sticks.
Such are the visions of childhood!
Now if we could interject our kids into some magaical castle school cafateria - What would a Halloween banquet look like?
